January 2026 Recipe Card Challenge with Let Me Scrapbook

The rules for the Recipe Card Challenge are simple: create a 4ā€ x 6ā€ recipe card using some (or all) of the free mini kit. There won't be a coordinating bigger kit this month.

The general theme for this month's cards is your favorite comfort recipe. This can be something you make when it’s freezing outside, or any time you need something to soothe your soul. If you don’t have a ā€œcomfortā€ recipe to share but still want to create a card, just use the kit for the recipe of your choice. 😊 I’ve included my card in the download.

Once you are done, upload your layout to the 2026 Recipe Card Challenge gallery and share/post it here. Be sure to have cards uploaded and posted by 11:59 pm EST on the last day of the month to be included in the Challenge Rewards. I look forward to seeing your creative cards and getting some new recipes to try!

Here's my card for the month. We spent many weekends with my husband's Grandma Wanda when our kids were young. This was one of the recipes she frequently made for us and something all our kids really liked eating along with her delicious, homemade bread. She always included fresh peas in her soup as well, but my kids always picked those out and gave them to their dad, so we never included them when we made it at home. We also rarely put ham in, but our kids loved sprinkling bacon and cheese on top. It's a really simple, comforting, quick and easy soup to make!

Here's my recipe. Took a copy of my mom's Jook (a rice congee--soup). Mom use to cook it on a gas burner outside all day. We used to have it on Christmas Eve, after burning fireworks-it was chilly. It's a great soup when you are not feeling well. With the rise of the Instapot, my cousin recreated the recipe especially for that appliance. So much faster.
A note for the rice. We normally use a japanese cup for measuring rice, which is a smaller volume. This recipe uses a standard american measuring cup.
