Tomato and Red Pepper Soup

recipe:
Tomato and Red Pepper Soup
*You will need a Large stock pot or dutch oven and a blender

Ingredients:
2 Tbsp of oil{of any kind I actually used butter}
1 large onion chopped finely
4 garlic cloves minced
1{28OZ} Can of Diced Tomatoes {OR 4 lbs of prepared cored\peeled tomatoes }
1 {12OZ} jar of Roasted Red Peppers
1 c. of Vegetable or Chicken Broth {or you can add water}
2 tbsp of Basil
Salt and Pepper to taste
1/2 c. of milk or heavy cream

In pot:
Heat oil,onion cook until soft ruffly 5-8 mins, add in garlic and cook 1 min.
add in your Tomatoes , roasted red peppers and broth, bring to simmer over medium heat
for 15 mins, or until mixture slightly reduces.
Season with Basil,salt and pepper and reduce heat to low.
At this point you will want to use your blender {big one or hand held}
blend till smooth
Now stir in the heavy cream or milk
make sure you taste as you go and adjust seasonings to your liking.
ladle into bowls and enjoy.


** NOTE: I have added 1/3 c. Parmesan cheese with the milk and it is also amazing
refrigerates 5 days
freezes for 3 months
reheat on stove top or microwave with stirring often

On one of our recent camping trips with our kids, we decided to keep it simple the first night with grilled cheese sandwiches and tomato/red pepper soup. It was the Costco version of this and was delicious; really excited to get this recipe so I can make my own. Thanks so much for sharing and participating in this month's challenge!
