My friend "Betty Crocker" gave me this recipe years ago. This has become one of my son's assigned dishes. We rarely make it the day before; he usually makes it right before we have any family dinner where mashed potatoes are on the menu. We like it best using a masher vs. electric mixer.

I really like the idea of making the mashed potatoes ahead, that has to be a good time saver when there is so much being made. I like the way that you have presented this recipe as well.
