Anzac biscuits have long been associated with the Australian and New Zealand Army Corps (ANZAC) established in World War I. It is thought that these biscuits were sent by wives and women's groups to soldiers abroad because the ingredients would not spoil easily and the biscuits kept well during transportation.
Anzac biscuits have a general exemption under Australian law to use the strictly protected word "Anzac" in their name so long as they are sold as "biscuits" and not "cookies"(Wikipedia)

Ingredients
125g butter, chopped
2 tbs Golden Syrup
1/2 tsp bicarb soda
2 tbs boiling water
1 cup (220g) caster sugar
1 cup (150g) plain flour
1 cup (90g) rolled oats
3/4 cup (60g) desiccated coconut

Method
1.Preheat oven to 180°C/160°C fan-forced. Line 2 baking trays with baking paper.
2.Place butter and golden syrup in a medium saucepan and cook over medium heat until butter melts. Mix bicarb and boiling water in a small bowl, then stir through butter mixture. Place remaining dry ingredients into a large bowl and mix to combine. Add butter mixture and stir until well combined.
3.Roll rounded 1 tbs measures into balls and place on prepared tray, leaving a 4cm gap between each
*OOPS* this was cut off in the LO and text 4. Slightly flatten each ball. Bake for 15-20 minutes, until golden. Cool on trays

Note: When I bake these, I usually cut back on theamount of sugar.

What a lovely page to share the story and recipe of the Anzac Biscuits. You create such stunning flower clusters!
Recently I made sugar-free ones ( using Rice Malt Syrup instead of the sugar and golden syrup) and they taste great. I might make up a recipe card which I need to do and share it in the gallery.

Oh my...these Anzac biscuits are amazing mouth-waterers.
Gorgeous presentation...as spectacular as the biscuits themselves.

Enjoyed trying to convert the recipe to American-speak.
And YES, I'll be baking these soon.

Although I'll need to remember to call them cookies or hubs will be topping them with butter. :)
 
They are so absolutely delicious. We have people who make them here for our June Faire. I look forward to t hem every year! This is beautiful. Love the beautiful, dainty, delicate clusters with the beautiful scraps of lace. I am so glad you included the gems of information about the biscuits (not cookies!).
