Anzac biscuits have long been associated with the Australian and New Zealand Army Corps (ANZAC) established in World War I. It is thought that these biscuits were sent by wives and women's groups to soldiers abroad because the ingredients would not spoil easily and the biscuits kept well during transportation.
Anzac biscuits have a general exemption under Australian law to use the strictly protected word "Anzac" in their name so long as they are sold as "biscuits" and not "cookies"(Wikipedia)
Ingredients
125g butter, chopped
2 tbs Golden Syrup
1/2 tsp bicarb soda
2 tbs boiling water
1 cup (220g) caster sugar
1 cup (150g) plain flour
1 cup (90g) rolled oats
3/4 cup (60g) desiccated coconut
Method
1.Preheat oven to 180°C/160°C fan-forced. Line 2 baking trays with baking paper.
2.Place butter and golden syrup in a medium saucepan and cook over medium heat until butter melts. Mix bicarb and boiling water in a small bowl, then stir through butter mixture. Place remaining dry ingredients into a large bowl and mix to combine. Add butter mixture and stir until well combined.
3.Roll rounded 1 tbs measures into balls and place on prepared tray, leaving a 4cm gap between each
*OOPS* this was cut off in the LO and text 4. Slightly flatten each ball. Bake for 15-20 minutes, until golden. Cool on trays
Note: When I bake these, I usually cut back on theamount of sugar.

Recently I made sugar-free ones ( using Rice Malt Syrup instead of the sugar and golden syrup) and they taste great. I might make up a recipe card which I need to do and share it in the gallery.
