here is the recipe .. and this is one that i absolutely LOVE! you can alter it so easily to your own taste .. but let me repeat .. don't skimp on the salad dressing!!!

Tortellini Salad

Ingredients:
Cheese tortellini 12 oz (I prefer Barilla)
Marinated artichoke hearts 6 oz jar (or more)
Sliced black olives, drained 2 oz
Shredded cheese (any kind), at least 8 oz
Italian salad dressing (I prefer Kraft’s Zesty Italian)
Cherry or grape tomatoes, sliced
And any other ingredients that you have on hand.

Cook pasta according to directions, drain and let it cool (but don’t chill it) before you add the ingredients. I usually wait until it’s just warm or room temperature. Here’s the key … DO NOT SKIMP on the salad dressing. The pasta will absorb a lot and you don’t want it to taste bland. And add anything else you want, depending on the occasion. I love adding shredded chicken so it’s more of a summer meal. And there is an Italian deli near me who sells antipasto by the pound .. they cut up their ends of different cheeses and meats which also makes more of a cold main dish. I’ve made this countless times and it’s always popular and keeps well for a family picnic.
