Delicious alternative to the traditional bread stuffing

Have made this countless times over the years and i honestly don't remember where i got the recipe. i've made it both as stuffing for the bird and as a separate dish in the oven. i do prefer it in the oven since you can get a little browning on it. AND i do make it with the skin and a bit chunky, not really smooth.

the potato is from Farm Fresh 2

here is the recipe:
Mashed Potato Stuffing
6 slices bacon
2 teaspoons salt
1 egg, beaten
½ teaspoon sage leaves
½ cup chopped onion
1 cup chopped celery
* 4 cups mashed potatoes
1 cup toasted bread crumbs

Cook bacon until crisp, then crumble. In ¼ cup of the drippings, sauté the onion and celery until soft. Combine all ingredients and mix well.
Makes about 6 cups
NOTE: ¾ cups of stuffing per pound of bird

* 1 pound of raw potatoes equals 2 cups of mashed

Makes enough to stuff a 10-12 pound turkey or can be baked in a 2 1/2- quart shallow casserole in preheated 350 degree oven for 15 minutes until hot and lightly browned.

Not only is my mouth watering, I was looking for a stuffing recipe alternative just like this.
