the recipe is from my Uncle Roy who had it passed down from his mom. Despite the fact that i'm not a fan of lemon ... these are just wonderful and melt in your mouth! here is the recipe;
Lemon Squares
1 cup flour
½ cup soft butter
¼ cup powdered sugar
1 cup granulated sugar
2 eggs
1 teaspoon flour
3 teaspoons lemon juice
Touch of grated lemon rind
Mix the first three ingredients together and place in a greased 9 x 9” pan. Pat the dough evenly over the bottom of the pan. Bake for 20 minutes in an oven preheated to 350°.
Beat the remaining ingredients until well blended. Pour over the partially baked crust. Bake for 25 minutes longer. Dust the top with powdered sugar. When cool, cut into square to serve.
