Recipe-Enchiladas with spinach, corn, and mozzarellaThese wraps are tasty and nutritious. You can add lots of healthy ingredients (feel free to vary them!). You make them into enchiladas by baking them in the oven with tomato sauce.Ingredients1 pack of extra fiber wraps1 red onion2 cloves of garlic1 red bell pepper2 stalks of celery1 can of black beans100 g spinach1 red chili pepper2 balls of mozzarella1 packet of taco seasoning mix1 can of diced tomatoes1 cooked sweet corn, kernels removed100 g grated cheeseOther needed items:1 rectangular baking dish, greased with a little oilPreparation:Preheat the oven to 200 degrees Celsius.Chop the onion and garlic finely. Cut the bell pepper and celery into pieces. Rinse the black beans in a sieve. Roughly chop the spinach and finely chop the chili pepper (remove the seeds if you don’t like it too spicy). Slice the mozzarella.Sauté the onion and garlic briefly in some oil, then add the bell pepper, chili pepper, and celery. Cook for about 7 minutes and add the taco mix
Cook for about 7 minutes and add the taco mix. Quickly cook it together and then add the can of chopped tomatoes. Warm through. Add the beans, spinach, and corn. Place the wraps on a board and spoon a few tablespoons of filling and a slice of mozzarella into each wrap. Roll them up and place them next to each other in the baking dish. Spoon some sauce over the rolls and sprinkle with cheese. Bake in the oven for about 30 minutes. Serve with sour cream, guacamole, and coriander, and enjoy with a small green salad.
I'm drooling, the recipe sounds delicious, thank you so much for sharing, I'm gonna give it a try this weekend, includes all what I love, especially corn, cheese, avocado and green salad. Back at your card, I really like the use of the papers and elements and, the design, so eye catching.
