November 2025 Recipe Card Challenge with Let Me Scrapbook-

LMS_RCC_2025-11, here is my -Nov. 2025 Recipe Card Challenge-
Quick Mash Pot -I make this recipe a lot, got it in our local shop in my town Lemmer, translate the recipe in English so you all can try it.

350 grams vegetable mix
50 grams spinach
400 grams instant mashed potatoes
Packet of onion chutney
125 grams bacon cubes
75 grams goat cheese or regular grated cheese
I always add a meatball as well
Preparation -
1- Heat a large wok or frying pan without oil or butter and fry the bacon cubes for 5 minutes over medium heat.
2- Add the vegetable mix and cook, stirring occasionally, for 8 to 10 minutes. Add the spinach at the end.
3- Add the mashed potatoes and mix with the vegetable mix. Heat everything over low heat for 3-5 minutes.
4- Crumble the goat cheese or sprinkle the grated cheese over the dish and serve with the warmed onion chutney.
I also add my roasted meatballs with some gravy if desired.

Tip/hint: Also delicious with some walnuts mixed into the dish.
