Chocolate chip cookie sandwich with speculoos recipe
Crispy chocolate chip sugar cookies filled with a delicious speculoos spread, now that is truly an ultimate tasty combination for Valentine’s Day.
Servings: 15 pieces
Ingredients-
Chocolate chip sugar cookies
150 grams white brown sugar
50 grams vanilla sugar
200 grams unsalted butter
1 egg (medium)
400 grams flour
A pinch of salt
150 grams mini chocolate chips or finely chopped chocolate
Filling
Speculoos spread (Lotus Biscoff)
Instructions
Mix the brown sugar, vanilla sugar, and butter until creamy. Then add the egg and mix until fully incorporated. Add the flour and salt and mix until it forms a firm dough. Fold in the chocolate pieces at the end. I used dark chocolate and chopped it finely. Wrap the dough in plastic wrap and let it rest in the refrigerator for at least an hour. Roll out the dough to a thickness of about 0.5 centimeters on a floured work surface. Don’t use too much flour, as the recipe already contains a lot of flour.
Otherwise, the cookies can taste too 'floury'.
Cut out the cookies using a shape/cutter of your choice. Place the cookies on a baking sheet and bake them for about 10-12 minutes at 180°C (top and bottom heat). Bake smaller cookies a little less time, so it works best to bake cookies of the same size per baking sheet.
When the edges of the cookies start to turn golden brown, you can take them out of the oven. The cookies are still a bit soft when they come out, so let them cool slightly before placing them on a wire rack.
Once the cookies are completely cooled, you can fill them with the speculoos paste. Take half of the cookies and spread about a teaspoon of the paste on each, press another cookie on top, and your sandwich cookies are ready.
Storage
It's best to store undecorated cookies in a sealed tin, where they can stay good for 4 to 6 weeks. Once the cookies are filled, there's a chance they will soften faster, so I recommend filling them only as soon you serve it with the pasta.
