Journaling:
Elizabeth had her first check up with the family doctor on the 8th of January. The appointment was at 11 but true to form, the doctor was behind schedule. Laura and I took turns holding and feeding her until their names were finally called - just after 1:30! She was really good, all things considered because that is a long time to wait when you are 2 months old!

Friday saw Ellen having her medical check after which we went to Freshco for some groceries. I had some leftover ham and Italiano shredded cheese so I bought a tube of pizza dough and tried out a recipe for pizza “cupcakes”. It worked out quite well but I think next time I will use pepperoni for more flavour.

Pizza cupcakes weren’t the only experiments on the menu this week. I tried a recipe for Air Fryer Grilled Cheese that sounded good and was not nearly as greasy as my usual frying pan efforts. The times in the recipe were a bit off but once I fixed that I was happy with the result. I also finally managed to use my mandolin properly and got nicely sliced potatoes without slicing any of my fingers.

Jason had physical therapy Saturday and Guinness seemed to be quite concerned for him. He still struggles to breathe well so Dawn suggested some breathing exercises.

We got to see a lot of Laura and Elizabeth this week and I found the baby swing Thomas had used in the basement and brought it out. Most of the week has been unseasonably warm and melting - nice for January!
