Husband is Mexican, so of course we love traditional Mexican food. We have been going to Cancun for years and nothing there disappoints. My favorite dish is Chilaquiles. You can’t find it in a lot of restaurants in the US. Cancun prepares it perfectly. It’s a layer of chips, shredded chicken, a spicy green tomatillo sauce, and topped with cheese. DELICIOSO!
kits are Aprilisa's Fiesta Mexico (adore everything about this kit!)
Also used a couple elements from Connie Prince's Fiesta kit (now retired)
