Hello there scrappy friends :). Not really scrapbook related this time :D.

So, thanks to the awesome Janet from Little Feet Designs (wink wink) I got myself a slow cooker!

Now I am looking for some great recipes to try out! Can you link me up to your favorites? Feel free to share many with me, I won't be mad at all!! :D

Actually, I am currently looking for something with chickem breasts for tomorrow's lunch!
 
Oh, I LOVE my slow cooker! One of our most recent new recipes for it is Slow Cooker Crack Chicken...and boy, did they name it correctly (because I could easily become that addicted to it, lol!). I don't have a fancy recipe to link to (there may be one, but I'm lazy this morning), but here's the recipe:

2lbs chicken breast
16 oz cream cheese
2 packages Ranch seasoning
bacon (will need to cook right before chicken is done)

Place chicken, cream cheese and ranch seasoning in slow cooker and cook on low for 6-8 hours (or high for 4 hours), until chicken is easily shredded. Shred chicken breasts and mix with other cooked ingredients. Add cooked bacon and mix. Serve warm (we put on buns for sandwiches).

So. Darn. YUMMY!
 
sounds yummy indeed JoyLynn! I am not familiar with the Ranch seasoning at all though.. what is in it?
 
Oh, I'm sorry...my brain doesn't always consider that not everyone is local ;)
Here, we have ranch seasoning packs that look like this:

But, there are easy recipes for making your own version, too -- just a few dry seasonings mixed together, like this one:

This is wonderful. I am always looking for some good crock pot chicken recipes.
the family usually requests pot roast and pulled pork, but I am a chicken person. I am going to have to try one
of these recipes this week
 
oh dear, it was!! I did skip oregano though, don't like that much and reduced the soy sauce too.. really worht the try!
 
When you want a change from chicken, try this pulled pork recipe. I got it off Facebook, but I always copy recipes to my own computer files on Word Pad, so I'm copying from that to here for you. This is simply delicious and easy to eat on buns!

Dr. Pepper Pulled Pork in the Slow Cooker


2 1/2-3 lb pork butt (also known as a pork shoulder)
24 oz. (2 cans) Dr. Pepper
1 medium onion, cut in quarters and then again in half
2 garlic cloves, minced
1 1/2 teaspoons dry ground mustard
1/4 teaspoon cayenne pepper
Salt and black pepper to taste
1/4 cup apple cider vinegar
3 tablespoons Worcestershire Sauce
Barbecue Sauce of choice


Place the chopped onions in the bottom of the slow cooker. Place the pork butt on top of the onions and add the garlic, ground mustard, cayenne pepper, salt, pepper, apple cider vinegar and Worcestershire sauce. Pour the Dr. Pepper on top and cook on high for 4-5 hours (or on low for 8 hours).


Very carefully, because the pork will be hot, remove the meat from the slow cooker and place on a large cutting board. Using two forks, shred the pork by pulling away from each other. The meat should be very tender by this point. Place the shredded pork back into the slow cooker and continue to cook for an additional hour.


Drain the remaining juices and toss the meat and onion mixture in the barbecue sauce of choice. I don't have an exact amount listed-just add a bit at a time until you get to your desired sauciness!

We got a 2-1/2 qt. slow cooker for Christmas because there are only two of us, one of whom is doing a low carb Keto type diet now. I normally cook in my 7 qt. slow cooker and freeze some of what I make or share with neighbors. I've decided I cook too much, so we are learning to scale down. I now have to learn how to scale my slow cooker recipes down to the 2-1/2 qt. slow cooker (which is certainly large enough for two people)!
 
We made this one in one of the cooking classes I did (I'm a registered dietitian). It worked well if you ate it that day, but it did not freeze well:

Slow Cooker Root Vegetable Stew
Makes 4-6 servings
Adapted from Gimme Some Oven
Prep time: 20 min. Cook time: 6 hrs.

Ingredients

  • 1 large white onion, chopped
  • 1 lb. butternut squash, peeled, seeded and chopped
  • 1 lb. carrots, peeled and chopped
  • 1 lb. parsnips, peeled and chopped
  • 1 lb. sweet potatoes, peeled and chopped
  • 1 lb. Yukon Gold potatoes, peeled and chopped
  • 2 celery ribs, stems removed and chopped
  • 6 cloves garlic, peeled and thinly sliced
  • 3 cups low sodium chicken or vegetable broth
  • 1 bay leaf
  • 2 tsp. dried sage
  • 1 tsp. black pepper
Directions

  1. Add ingredients to a slow-cooker, and carefully stir to combine.
  2. Cook on low heat for 6-8 hours until the vegetables are tender.
  3. Remove bay leaf and serve.
 
This is a yummy chili recipe we made. You can alter it by adding in any other vegetables you would like, such as bell peppers, onions, carrots, celery, or whatever other vegetables you have on hand that you like:

Triple Bean Chili
Makes 6-8 servings
Adapted from All Free Slow Cooker Recipes
Prep time: 16 min. Cook time: 7-8 hours on low, 4 on high

Ingredients

  • 1 (15-ounce) can black beans, drained
  • 1 (15-ounce) can garbanzo beans, drained
  • 1 (15-ounce) can kidney beans, drained
  • 1 (15-ounce) can corn, drained
  • 2 (19-ounce) cans diced tomatoes, undrained
  • 1 (16-ounce) can tomato sauce
  • 2 - 3 tbsp chili powder
  • 1 tsp ground cumin
  • 2 - 3 cloves garlic, diced
Directions

  1. Drain the beans and corn, and put the can contents into your crock.
  2. Top with tomatoes and tomato sauce.
  3. Stir in spices.
  4. Cover and cook on LOW for 7 to 8 hours or on HIGH for about 4.
 
Slow Cooker Maple Chicken & Sweet Potatoes
Makes 4 servings
Adapted from 5 Dollar Dinners
Prep time: 20 min. Cook time: 8 hrs.

Ingredients


  • 2-4 large boneless skinless chicken thighs or breasts
  • Salt and pepper
  • About 3 Tbsp maple syrup, drizzled over chicken
  • 3 medium sweet potatoes, peeled and cubed
  • About 1 lb. baby carrots (or 4-5 peeled carrots cut into sticks)
  • 1 small onion
  • Salt and pepper over the top


Directions


  1. Place the chicken the base of the slow cooker. Season with salt and pepper. Drizzle the maple syrup all over the chicken.
  2. Place the cubed sweet potatoes, baby carrots or carrot sticks and chopped red onion over the top. Sprinkle a little more salt and pepper over it all.
  3. Set the slow cooker on low and let cook for 8 hours.
  4. Serve Slow Cooker Chicken with Sweet Potatoes and Baby Carrots.
  5. To pack into gallon size freezer baggie: Label and follow the same order and directions in the first 2 steps to fill the bags. Remove as much air as you can and seal. Freeze up to 6 months in your fridge freezer or 12 months in a deep freezer.
  6. To thaw, place the bags in the fridge overnight.
