Most of the year there are no kids in our house and I've been doing PL for years

I scrap our travels, everyday stuff, and lots of pictures of the kitty. I think doing PL, especially if you don't have kids, makes you look at the world differently. You look for beautiful and interesting things. I think Becky's way of doing P52 would be great if you find doing it the traditional way intimidating. There's a lot less pressure to "keep up" when you're concentrating on one story a week.
Some things I've scrapped in my PL- my husband, my cat, random photos my extended family sends, books I'm reading, TV I'm watching, pretty sunsets, my plants, new recipes, building in my town that I love, favorite restaurants, my desk at work (when I worked outside the home) objects in my home that have special meaning, songs I'm listening to, favorite spots in my home, selfies, lizards that came to visit, ducks that used to hang out in my neighborhood, parks I like to go to, my husband's work and hobbies, emails with friends who live far away, pictures stolen from social media, LO's I'm working on, things in the news.... the list goes on and on...
EVERYONE has an interesting life and interesting stories to tell. I believe that with all my heart. Having kids or not having kids has nothing to do with your level of interestingness
