Cooking More or Less?

I’ve been cooking more and eating more often. I had to cut down on the carbs as I was indulging a bit too often. I’m getting back on track this week and not snacking so much. It was fun to eat some carbs I’ve not had in a few years but I started to feel yucky so have cut them out again. Now I need to do some low carb baking.
 
Baking more yes. Frequent cookies at night. Mostly the easy already made dough that you throw on a sheet and stick in the oven. Cooking about the same, Mom does most of the cooking, always has. We rarely would go out to eat, just easier to eat at home.
 
A funny cartoon landed in my inbox yesterday...a little boy sitting at the meal table saying "Mum, can't we go to a restaurant for dinner? I'm sick of eating "groceries!!!!"
 
We, as a family, are cooking meals together. Teaching the kids how to cut, chop and measure properly and letting them try little easy meals on their own.
With our usually busy and varying schedules it is sometimes hard to have a set dinner time and tend to grab a lot of take out or should I say eat out.
Now we do eat at a set time daily because it is only my daughter who has "late" days with school.
 
I am cooking about the same amount. Since I worked at home before too, my routine is fairly similar. I will say that cooking feels a lot more monotonous now for some reason!

I had low carb cookies but have eaten them all. I usually have stash in the freezer portioned out for single servings which I need to do again b/c I have a hard time just eating a couple. I've been craving peanut butter cookies.

Yes, we are having family dinner every night together too which wouldn't always happen depending on our schedules. In general, we are having more family time together since no one is leaving the house except for groceries and my daughter working part time.
 
We've been cooking a lot more- both sweets and normal food. The biggest issue is that it's a lot of pasta and rice and things that I shouldn't be eating, but since we can't go shopping every day, or even every other day, and my freezer is FULL of non-vegetables because my partner's mother has also gone on a cooking binge. I can't live on tinned peas. Can't and won't. So we're eating a lot more carbs, and my partner has made his grandmother's frolla a half dozen times and I'm not bad about it... it's so good!
 
My husband is the main cook/baker in our house. I am one lucky gal! He has been baking more this past month than any average "before" month (except Christmas cookie month). I haven't been looking at the scale or measuring myself lately, for obvious reasons. But I do have lots of willpower and only indulge at mealtimes (mostly). :D
 
I am cooking more much to my families dismay. We usually don't eat much together since everyone is on different schedules but since the Cafe Rio take out line is really long, I have had to cook. Teasing!
 
I've always cooked dinner each night, so that hasn't changed . . . but I'm bouncing between comfort foods (think grilled cheese with tomato soup) and full on roast chicken with roasted vegetables. I've been doing more hearty soups during the week because I have time to start and let them slow simmer. Before covid, I would save something like that for the weekend because I get home too late from work.

I wanted to bake, but can't find yeast, flour or even a normal sized bag of sugar right now. Even the boxed cake/muffin mixes were gone. I used up the rest of my supplies on banana cream cheese muffins. My husband and son are also going through two containers of ice cream each week!
 
We cook 6 days a week, and saving the 7th to get take-out to support a local business. Before Covid, it was just hubby and me...so we were good about eating at home and only going out occasionally with friends. Now having the kids home, making meals for the whole family is becoming super tedious. Not everyone likes everything...blah blah...lol
 
I'm cooking more, which apparently has made our electric bill go way up (we just found out this morning) I guess I'm running the dishwasher and oven a lot more? I think we're still saving in the long run by not going out at all. I'm eating more, but exercising more too, so I'm feeling pretty good about that. I wanted to do a Whole30 this spring, but it's really hard to plan with the grocery situation being so inconsistent. We finally got some flour this weekend, so that was exciting!
 
I am also cooking more, and baking more with my daughter. I am so trying hard to do all in low carb, less sugar so I am always in search of recipes with those in mind.

But I love it, because my daughter and my husband are at home and we have more bonding time than ever.

I haven't even checked our utility/water/gas bills yet and don't want to LOL. With my daughter living here now, with everyone home all the time, showering, eating, lights on all the time, etc...I know our bills are going to skyrocket. With groceries, I'm not able to shop the way I normally would so am not eating quite as low carb as usual and have gained at least 6-7 lbs...ugh. I'm trying to cut back again, no more rice or potatoes, and have started low carb baking again. There might not be white flour/yeast in the stores for my hubs for his baking but for me....almond/coconut flour is back on the shelves. Today I'm making a few pumpkin/banana loaves to portion out and freeze.
 
My electric bill definitely went up lol... the dishwasher is running at least once a day. Let's not even talk about my grocery bill with all 4 of us home... yikes!
I'm cooking more and finding some creative recipes, which is a good thing. After the first couple of weeks of eating ice cream every day, I've stopped buying it at the store lol. Have put on a few pounds though, and that is super frustrating. Need to get myself back on track.
