Meals Right Now?

With the isolation right now, maybe not the usual access to groceries and maybe your mood right now....are you eating differently now? Have you changed what foods or meals you normally eat or prepare?

What's on the menu this week for you?
 
I find that I'm not really motivated to cook or bake much right now, even though I have more free time with my reduced work schedule from home.

I've been preparing one pot meals, spaghetti, casseroles as they are easy to make and I can make enough for leftovers for the next night.

I've been craving more comfort food. I've been keto/paleo for a number of yrs now and with the difficulty in getting some of the foods I normally shop for and feeling kind of overwhelmed with food in general, I had spaghetti with pasta for the first time in many years (it was soooo good) and I had higher carbs in many meals this past 10 days or so, with beans, oatmeal and whole wheat products.

But, I gained 6 lbs, I can tell my body isn't handling it very well, so yesterday I got back on the low carb wagon and will hopefully figure out a way to eat the way I want to with the foods I can get at the store. Our store shelves are still very low or out of many foods but now that everyone is limited to one item per product, hopefully that starts to improve over the next little while.

So today I am having a big salad with tuna for lunch and dinner will be a coleslaw mix with hamburger with soya sauce and spices (google crackslaw if you want to see the recipe, I found mine on pinterest) and a big serving of broccoli.

I still want to make low carb banana bread so maybe tonight I'll get it done.
 
I have never done so much meal planning.....I have a whole calendar of at least 2 meals a day for our family of 4. We used to take out food because of the schedules but now I prepare something home made every single night (including weekends). With more time, I can actually spend a little more time cooking each thing. The best part is that my family (including 2 teens) are so appreciative and actually are saying they like many meals so that is a big change for sure!!!!

Also, Pinterest and food blogs are a new fav go to for recipes....

I used to follow recipes Exactly but now I improvise depending on what we have on hand lol...

I did add minced onions that I microwaved in the oven for 2-3 min to top.
Used Monteray Jack Cheese.
Also mixed heavy whipping cream and sour cream for the bottom of the "custard"

We are pretty much eating the same. We were fortunate to have food already hear. We are just eating what we have. I have not been to a store in a week. My daughter-in-law asks if we need anything, but other than milk we are okay and eating normal
 
I had started us eating at home and cooking more at home back in January before this started (God's timing). We were trying to save for some vacations that have since been cancelled. I buy in bulk because of one teenage boy and one preteen. I am cooking and baking a lot now. I am loving the baking! I have made banana bread, monster cookies, chocolate chip pie, muffins. We cook a big breakfast on the weekends...during the week it is free for all. Lunch is usually left overs from dinners. Dinner is planned out on a calendar for the next 3 weeks. I have been placing orders with the grocery store or Walmart or Target and doing pickup for essentials like fruit, eggs, milk. My two boys live off of fruit and veggies esp my almost 10 yr old.

I use my Instapot a lot as well as my Air Fryer. We use the Instapot to make baked potatoes, mashed potatoes. The boys love a taco pasta I make in the instapot. It takes about 15 mins from start to finish.

Things are so weird with food right now...

I've always been a meal planner and for the past year or so we've been doing Walmart grocery pickup. Now I think EVERYONE is doing grocery pickup, so it's harder to schedule a time. And when I do get a time, I only get about 1/2-2/3 of what I ordered. We haven't been able to get meat (except sausage) for a few weeks now, so there goes any hope of low-carb cooking, LOL. I'm still menu planning, but I have to wait until after I get the order, so I know what I have to work with.

All of that sounds negative, but I'm EXTREMELY thankful that we can do pickup orders. We've only been inside a grocery store twice in the past two months. I had already started my "hurricane prepper pantry" in February, so we've been eating from that as needed. (I try to keep 2-3 weeks of food that doesn't need to be cooked in case we lose power during hurricane season. That will also come in handy if we get sick)

Most baking things have been impossible to get here for weeks, so I've been hoarding my flour so I can bake my husband a birthday cake this week. This has been a super challenging time, but I know it could be so much worse.
 
We've cooked bigger items like a large Ham shank and Turkey just to have meals for a few days each time next is Chili.
