June 2026 Recipe Card Challenge with Let Me Scrapbook

The rules for the Recipe Card Challenge are simple: create a 4” x 6” recipe card using some (or all) of the free mini kits.

I just got home from an Alaskan cruise where it was cold (but so beautiful) and am now back home to warm weather and flowers blooming. For an entire week, every meal was like a fantastic potluck – and that inspired the general theme for this month's cards, which is your favorite “POTLUCK” recipes. This can be anything ~ salad, main dish, dessert, appetizer, soup, vegetables, breads, etc.

I chose 4 previous freebie kits that reflect my once-in-a-lifetime vacation. You can use these or any other previous freebie or purchased kits you already have. You can use coupon code LMS_RCC_2026-06 to get any of my other recipe card kits for $1.50 off. You can use the coupon more than once, but it will only apply once per order. I got this from the cafeteria cook in the school where I worked - teenagers loved it so I figured my family would too! Every time it was on the menu the cafeteria sold out before the end of the lunch hour, no matter how often they increased the quantity.
 
Recipe:
English Pea Salad

Ingredients
¾ Cup Mayonnaise
½ Cup Sour Cream
1 Tablespoon Sugar
1 Tablespoon Apple Cider Vinegar
1 Cup Cheddar Cheese cubed, sharp is best
½ Red Onion small, diced
4 Cups Frozen English Peas defrosted
8 Slices Bacon cooked and crumbled
Salt to taste

Instructions
1. Add mayonnaise, sour cream, sugar & vinegar to a small
bowl and whisk together. This will be your dressing.
2. Place the cheese, onion & peas into a large bowl.
3. Pour the dressing over the top and fold everything
together.
4. Sprinkle the bacon over the salad and fold together one
last time. Salt to taste.
 
I used to just buy it at Walmart. But the one here in town stopped selling it. So I had to start making it myself. LOL
Broccoli Salad
8 cups broccoli florets cut into bite-sized pieces
1/3 cup diced red onion
1/2 cup dried cranberries
1/4 cup sunflower seeds
1/2 cup bacon bits
1 cup mayonnaise
3 tablespoons apple cider vinegar
2 tablespoons granulated sugar
salt and black pepper to taste
Whisk together dressing ingredients in a medium bowl. Set aside. In a large bowl, combine broccoli, onion, cranberries, sunflower seeds, and bacon bits. Pour the prepared dressing over and mix well. Refrigerate for at least one hour before serving.

Before we get any further into summer, i thought i'd share my go-to potluck recipe. i HATE to cook (i know, crazy to do this challenge every month) and whenever i go to a potluck, i always bring a fresh fruit tray with a dip. this is my summer dip and it's WONDERFUL. i also admit to freezing any that might be too much and eating it like ice cream!

This salad is a favorite of mine. I think it might be time to make it again, some family members have been mentioning it quite often recently LOL
