Recipes Using Zoodles

... those noodles made with zucchini. I generally just use any sauces I would use with noodles, but I'm hoping someone has something new I haven't tried - non-dairy only.

Homemade pesto. Homemade tomato sauce. Avocado pesto. Teriyaki. Italian dressing. Vinegar and lime juice based dressing.

These are all done homemade and "clean eating" based. Yum. I love zoodles!
 
Avocado pesto is something I definitely need to try! Thank you for the suggestions. Why did I never think of pesto?!
 
I love zoodles! I've never tried pesto with them either.... and I have avocados that I need to use too. Yum! During the school year, sometimes I cook up some ground turkey and mix that with the zoodles for an easy lunch.

Are zoodles difficult to make? I think I even have one of those machines somewhere lurking about. I'm just such a lazy cook. Maybe a mandolin would be easier? At least easier to store.

I don't find them difficult to make at all. I have a hand-held thingy called a "vegetti" which I picked up at a local CVS store, and I simply hold it to the end of a zuchinni and twist the vegetable through it. Very easy! You can have a mound of zoodles in no time! The "vegetti" is still out there and found now at lots more stores, like Wal Mart, etc.
 
I haven't done this with zoodles--I just chop up the zucchini into little pieces. Fry in a covered skillet with butter, salt, pepper, onion powder, garlic powder, and nutritional yeast (or which ever spices you want!). After it is 99% cooked, push all of the zucchini to the edges and fry 2-3 eggs in the center (scramble, sunny side up, whichever and with whichever seasonings). So yummy!
