Food talk - one pot meals

The weather is getting chilly, the daylight is getting shorter. It's time for cozy, comfy meals. I like one pot, crockpot or airfryer meals.

What do you like? Care to share a recipe?
 
My Go to is "Chicken Pot Roast"
Put in large crock pot in this order
4 Chicken Breasts
4 Potatoes - Washed and cut into LARGE Cubes (skin off or on, your choice)
6 Carrots -Washed, peeled and cut into halves
1 package Good Seasons Italian Dressing Sprinkled on top (just the packages, you don't need to make the dressing itself)
2 tbsp. Olive oil

6 hours on Med/Medium High depending on your crock pot.
Done

This is an excellent Meal to take to someone as well. It can be prepared a day or two before and put in refrigerator.
Take the set up the night before or the day of along with instructions. This way they can put it in when it's convenient for them. It makes the whole house smell delicious.
 
In the fall, I like to make Shakshuka as it's high protien and low-carb. There are a ton of variations, but here's one to get you started: Easy Shakshuka with Feta (eggs in tomato sauce) - Bowl of Delicious

If you don't have a large number to feed, I recommend making everything EXCEPT the eggs... then the dish can easily be divided up and reheated. That way, I can quickly poach a fresh egg and add it to the dish without it get rubbery.

Nicky is my cousin's daughter. Her mum was an amazing cook and Nicky just branched out from there. Her recipes are absolutely fabulous. I love going to her house to eat :) They are pretty easy, most of them. She likes easy and tasty.
 
It actually got cool enough this past weekend we did a crockpot chili.

One white onion diced, one lb ground beef, one can Rotel, one can diced tomatoes, one small can tomato sauce, one can chili beans, one packet low-sodium chili seasoning. I caramelize the onion first, then add the beef. Once browned, I add the seasoning, then dump in everything else and bring it to a boil. Then I let simmer for a minimum of 15 min. But in the case of this weekend, I just left it on warm for a couple of hours and then it was ready to eat whenever we were hungry. I like to add shredded cheese to mine. Hubby likes to add the Stevia brown sugar to his.
