<p>Spelt is a type of wheat but one that is an "ancient" grain, that has never been genetically modified, whereas modern, "regular wheat" (the everyday white flour that is in everything), has been extensively modified genetically, and its gluten content highly increased to give baked goods that fluffy look and texture. I cannot digest it since my 30th birthday, but I can digest Spelt no problem. You can find it anywhere they sell "health" foods. It does contain gluten, but in natural, normal amounts. It has a great taste, too, by the way.</p>
